晶球化技術在皮膚保養品劑型之應用

晶球化技術（Spherification）被應用於分子料理與保健食品，利用晶球化技術包覆天然色素，並應用於保養品劑型之相關研究相當缺乏。本研究利用海藻酸鈉與各類天然色素，進行晶球精華液保養品之開發。本論文利用海藻酸鈉與乳酸鈣晶球化配方技術，包覆各類水果籽(酪梨籽、芒果籽、龍眼籽、荔枝籽、釋迦籽)天然色素，並製成易塗抹之晶球精華液劑型，此晶球化配方技術包覆材料包含紫草、β-胡蘿蔔素、大麥若葉(嫩葉)、藻藍蛋白、紫番薯、二氧化鈦、竹炭等，透過晶球精華液色差變化與有效性評估，探討其可行性。利用微波萃取法進行水果籽萃取並進行安全性試驗。晶球配製是以海藻酸鈉水溶液分別加入水果籽萃取液和天然色素，透過黏

度、pH值與濁度測量，評估天然色素在晶球的穩定性與外觀變化，並測試晶球色差值變化、晶球在不同膠體變化及安定性試驗。結果顯示，不同種類水果籽在皮膚試驗30分鐘，對皮膚無任何不良反應，但是經過24小時測試，荔枝籽對皮膚可能有不適反應。黏度測試中海藻酸鈉水溶液中添加油脂會降低黏度值。晶球在纖維質膠體可維持穩定與懸浮狀態。有效性評估結果顯示，釋迦籽具有保濕與黑色素下降能力。海藻酸鈉晶球化技術，可製成易使用、不黏膩且塗抹時具有水潤感之創新皮膚保養品，因此具有開發潛力與皮膚保養品之應用價值。
